350g diced, seedless watermelon
1 large thinly sliced celery stalk
½ thinly sliced red onion
90g baby spinach leaves
Small handful of fresh mint leaves, roughly chopped or torn
60g crumbled goat’s cheese
1tsp lime juice
1tsp lemon juice
130g sheep’s milk yoghurt
Handful of chopped coriander leaves
Freshly ground sea salt and black pepper
- Using a small bowl, whisk all dressing ingredients until combined and season to taste.
- In a large bowl, combine salad ingredients and divide between three small bowls for serving.
- When you are ready to eat, spoon dressing on top and serve immediately.
