Smoked Chicken Salad

This chicken salad recipe is festive yet light, healthy and tasty, and it only takes 10 minutes to prepare. It is perfect when your time is limited.


2 smoked chicken breast fillets
1 small bunch rinsed watercress
½ cup fresh mint leaves
350g kaleslaw salad kit including dressing and seed packet
2tbsp dried cranberries


  1. Shred or thinly slice chicken breasts.
  2. Arrange mint, watercress and salad mix on a large platter and top with dried cranberries and seed packet.
  3. Drizzle salad with dressing and serve.
