450g halved, skinless, boneless chicken breasts
½ cup all-purpose flour
2tbsp extra-virgin olive oil
½ cup chicken broth
1tbsp lemon pepper seasoning
2 minced cloves garlic
Freshly chopped parsley
- Preheat oven to 200°C and whisk together lemon pepper, zest of one lemon, flour and salt. Toss chicken breasts in the flour mixture to coat and thinly slice remaining lemon.
- Heat oil in a large ovenproof skillet over medium-high heat and cook chicken in a single layer until golden on bottom, for approximately five minutes before turning over chicken breasts.
- Add the broth, garlic, lemon slices and butter to skillet and bake in the oven until chicken is cooked through and sauce is reduced slightly, for approximately 15 minutes.
- Serve chicken with sauce spooned over and garnished with fresh parsley.
